˙ᗡNՈOᖵ Brewing – Perth
Founded by industry veterans Steve Finney and Will Irving, ˙ᗡNՈOᖵ Brewing represents the culmination of decades of experience and passion in Western Australia’s craft beer community. Both Finney and Irving have long histories in the beer world, having been instrumental in shaping iconic WA breweries like Feral, Otherside, and Matso’s.
The Founders
Steve Finney, whose resume includes roles at Fremantle’s Little Creatures, Otherside and Matso’s, is deeply committed to building a sustainable, community-focused brewery. His experiences in helping craft beer brands grow only to see them acquired and transformed have fuelled his desire to create a brewery with lasting independence and a strong internal culture.
Will Irving, on the other hand, is widely respected for his innovative brewing work at Feral Brewing, where he helped bring beers like Hop Hog and the iconic Biggie Juice (originally brewed for the Royston during GBW’s PoO) to life—paving the way for the rise of hoppy pale ales and hazy IPAs in Australia. His focus on diversity and experimentation in beer styles remains central to his work at ˙ᗡNՈOᖵ.
The Venues
˙ᗡNՈOᖵ’s flagship venue is ˙ᗡNՈOᖵ LAB in Byford, about 45 minutes south of Perth. This brewpub, nestled by the water, opened in mid-2023 and has quickly become known for its cozy atmosphere and cutting-edge beers brewed on-site with a 600-litre system. The venue offers a mix of core beers and seasonal experiments, alongside a menu influenced by West Coast USA cuisine, particularly its signature French dip sandwiches(
Building on this, ˙ᗡNՈOᖵ has expanded with ˙ᗡNՈOᖵ and Friends in Maylands. This pop-up venue showcases ˙ᗡNՈOᖵ’s beers alongside collaborations with other Australian and international breweries like Rocky Ridge and Garage Project. With 15 taps and a rotating lineup of beers, the Maylands spot is a lively hub for the local beer community.
The crown jewel in their expansion plans is the Subiaco venue, set to open by the end of 2024. This new space will be their primary production site, housed in the former Golden West brewery. The 400-capacity venue will not only increase brewing capacity but also offer a variety of hospitality experiences, blending a regional brewpub atmosphere with an urban setting.
Beer Styles
˙ᗡNՈOᖵ Brewing embraces a broad range of styles, reflecting Will Irving’s belief that a brewery shouldn’t limit itself to just one type of beer. Their core lineup is led by SUPER, a hazy pale ale that has quickly become a favorite among locals for its balanced, citrus-forward profile. They also offer CRISPY, a clean, German-style pilsner, which has become a staple at their venues(
Beyond these core beers, ˙ᗡNՈOᖵ is known for its experimental range. The Wanderer series allows the brewers to play with unique ingredients and techniques, such as barrel-aging and the use of seasonal fruits for sours. Irving has a deep interest in wild and barrel-aged beers, sourcing barrels from local distilleries for projects that will age for over a year.
